Lentil and Hazelnut Burger Patties

There are those that choose the vegetarian life or would like something outside the meat realm when it comes to barbecues and burger dishes. It is for this reason that one can try out this lentil and hazelnut patties recipe. Lentils are perfect because they have high protein content just like meat.

ü 3 cups of dry lentils
ü 1 cup finely chopped roasted hazelnuts
ü 3 eggs
ü 1 cup of breadcrumbs
ü 1 chopped medium-sized onion
ü 1 tablespoon of chopped parsley
ü ½ teaspoon of crushed thyme
ü 1 or 2 tablespoons of olive oil
ü 1 teaspoon of dried and crushed basil
ü Salt and pepper to taste

  1. You will begin, as always, by washing the lentils and then placing them in a saucepan. Put water that just covers the lentils and bring them to the boil for about 2 to 3 minutes. You will then turn down the heat to allow them to simmer for the required time of up to 1 hour. Be sure to drain them once they are cooked but whole.
  2. Mix the lentils, eggs, breadcrumbs, hazelnuts, parsley and onion.
  3. Once these are well mixed, you can then add in the salt, pepper, thyme and basil.
  4. You will then split the final mix into 16 patties.
  5. Place a frying pan over the fire and put in the olive oil to heat up. You can fry the patties about 4 at a time. Using a new oil application will ensure the best results.
  6. Place them on paper towels to drain and them on a platter, ready to serve.
As earlier noted, this recipe can make 16 patties but if you wish to make them thinner, you can make as many as 18. This recipe will take 1 hour 30 minutes from start to finish.
There is the option to use vegetable oil in place of olive oil for frying the patties. You can also choose to use walnuts instead of hazelnuts in the patty making process. If your eggs are small, you can choose to add an extra one. There is the option to slightly mash the lentils before mixing them with the other ingredients. You could also add garlic to the recipe if you are a fan.
